The 12 Days of Christmas Cookies - Chewy Gingersnaps


Day Four of the 12 Days of Christmas Cookies is a chewy version of a traditional Christmas Gingersnap. Nothing says Christmas more then gingersnaps, however I'm not the biggest fan of the hard style gingersnap so why not combine those flavours with a delicious chewy and soft cookie.


Preheat oven to 350F.

Cream butter and 1 cup of sugar together (save the 1/2 cup of sugar for later). Add egg and molasses and beat until well mixed.

Add ginger, cinnamon, gloves, salt, baking soda and flour and mix until well combined.

Roll dough into one inch balls and roll each ball into remaining 1/2 cup of sugar. 

Place on greased cookie sheet and bake for 13-15 minutes.
