Potato Broccoli Cheese Soup!

I could eat soup all day every day. This past summer was the hottest summer ever and I ate soup almost every day for lunch. Some think I'm crazy, others totally can relate!

My two favorite types of soup are broccoli cheddar soup and potato soup. I was thinking why not combine the two to make one epic soup flavor! I made this and absolutely loved it. You can go for a vegetarian version but changing the chicken broth to vegetable and avoiding the bacon. Also you can replace the flour with gluten free flour and the milk with soy milk to make it gluten and dairy free.

This recipe is super easy and literally only takes 30 minutes to make – if that. I obviously could not finish the entire pot in a day or two so I froze the rest of the soup into individual servings that I could quickly take with me for lunch each day.

So there you have it! A delicious Potato Broccoli Chedder Soup that is to DIE for! Just a tip when reheating - add some milk or water to make the soup a bit thinner. I found that it is a tad bit thick for my liking when I reheat it.
