Cooking with Maverix: Sausage, Spinach and Ricotta Stuffed Pasta Shells
I have been searching for a way to add more pork into Maverix's diet. Not that it is essential but I'd like him to have a variety of meats in his diet. Pork always tends to be to tough for him to chew with his little toddler teeth so he rarely eats it. After looking time and time again for options the only suggestion I could find was to use sausages. So now I had to think of a yummy recipe for pork sausages that was healthy as well.
I love lasagna and my recipe does include sausage as well as ground beef but I wanted something more fun and interesting, why not stuff shells with sausage instead of layering? Add in some yummy (and sneaky) spinach and of course a classic ricotta filling and your all set for an amazing dinner that even your toddler will love!
If your toddler likes to cook as much as Maverix it is fun to let them stuff the shells as well. It may not be clean and you might get more filling on yourself and your toddler then in the shells but thats what Cooking with Maverix is all about :)
So there you have it! It is so easy to make and was a hit not only with my family but a few girl friends too! I had enough extra shells and filing to make an entire second dish that I brought to a girls night and it was a huge hit! The second time I made this recipe I just put the extra shells in to a freezer pan and froze it for an easy dinner during a crazy week!
